Summer is just around the corner, and what better way to celebrate the launch of our Summer Brights collection, with a healthy & delicious salad. To serve when you have people over for a summer nights dinner party, post-beach barbeque or to bring to work for lunch, we’ve got you covered.
Ingredients:

3 cups chopped green cabbage

2 cups chopped purple cabbage

1 cup diced cucumber

½ cup sliced green onion

1 cup diced bell pepper

1 cup shredded carrots
-
½ cup chopped cilantro
-
1 cup air fried tofu or 1 cup grilled chicken breast (seasoned to your liking)

½ cup chopped roasted cashews
Dressing:

3 tbsp soy sauce
-
½ cup peanut butter
-
1tsp sriracha
-
2 tbsp rice vinegar
-
1 tbsp lime juice
-
1 tbsp toasted sesame oil

1 tbsp organic maple syrup

1 tsp ginger
-
1 tsp garlic
You can store this salad in the fridge for up to 5 days, enjoy it as a side, as a main or as a dipping snack with corn tortilla chips! Most importantly – ENJOY!
